The baker

Margaux
Laurent

Founder & head baker

She has opened this bakery almost every morning for nearly forty years. She knows the feel of dough that's proofed too long, the exact colour a croissant turns half a minute before it's perfect, and the name of nearly everyone who walks through the door before seven.

Background

A life measured
in early mornings.

Margaux grew up in a village outside Lyon, the youngest of four, in a house where the day began with bread. Her grandmother kept a bakery in the front room and a wood-fired oven out back that ran, as Margaux tells it, "too hot on the left and sulking on the right." By twelve she could read that oven better than the woman who built it.

She trained formally in Lyon, then spent her twenties in the kind of brutal, beautiful apprenticeships that either break a baker or make one — fourteen-hour days, a chef who threw under-proofed baguettes across the room, and the slow accumulation of the thousand small things no book can teach.

In 1985 she followed a love that didn't last to a grey city on the other side of the world. The love left. The flour stayed. A year later she signed the lease on a narrow shop with good light and a temperamental deck oven, and called it Maison Margaux — half a name, half a promise.

Her hands

What she does that a machine can't.

She reads the room

Humidity, flour, the heat off the oven — every batch is a little different, and she adjusts by feel before the dough has a chance to tell her she's wrong.

She laminates by touch

Thirty-six layers of butter and dough, folded by hand because the butter has to be exactly cool enough — a thing you feel through your fingertips, never read off a gauge.

She remembers you

The almond croissant on Fridays, the sourdough sliced thick, the birthday cake from three years ago. The recipes are written down. The people, she keeps in her head.

In her words

A few quick questions.

First thing you bake each day?

The baguettes, always. They need the longest in the oven and the most attention coming out. Everything else can wait its turn.

The bake you're proudest of?

The plain butter croissant. Anyone can hide behind chocolate. There's nowhere to hide in a croissant — it's just butter, flour, time and honesty.

Hardest lesson?

That you can't make it tomorrow if you burn yourself out today. I learned to hire help about ten years later than I should have.

Why still at three in the morning?

Because the city is quiet, the oven is warm, and there is nothing in the world quite like the smell of the first tray. I'd miss it.

Taste what four decades makes.

The menu is small on purpose — everything on it has been made the same careful way since the beginning.
