I'm Rosa Delgado. I grew up in Uruapan, Michoacán, where the best food was never in a restaurant — it was on the street, served fast and made with care. When I moved to Portland in 2014, I missed that food so much I decided to make it myself.
Six years later, the folding table is a bright green truck you'll spot around town. We still press every tortilla by hand, braise our own carnitas overnight, and grind salsa fresh each morning. Nothing frozen, nothing from a bag. Just the food I grew up with — for the city I now call home.
